Hands On
Enchiladas Verdes
Enchiladas are rolled tacos covered in a salsa. Their history stretches as far back as the Aztecs. In this class you will learn to make "Green" enchiladas - using a salsa verde. The enchiladas are prepared with chicken; however we can substitute beans for vegetarians.
Sopes
A sope is a traditional Mexican dish consisting of a fried masa base with savory toppings. In this class, you will learn to make the sope and the preparation of the toppings. This class is perfect for a vegetarian as it can be prepared without meat.
Irresistible Salsas
Salsa...the spanish word for Sauce. Salsas are used at every meal and there is a salsa for every type of entree. In this class, you will learn the traditional method of salsa making using a molcajete.
Tacos de Pescado
Tacos are a staple in Mexico - and who doesn't LOVE tacos!! In this class, you will learn the secret in making the perfect tortilla and then prepare the fish and other toppings. Shrimp can be substituted.
Mole con Pollo
Many people associate 'Mole' with the states of Puebla and Oaxaca...but moles are made in other regions of Mexico. In this class, you will learn how to make a traditional red mole. This is best served with chicken and rice.
Chiles Rellenos
Chiles Rellenos (stuffed peppers) are a popular menu item at many Mexican restaurants. In this class, we will share with you our mother's recipe for making this classic Mexican meal.
Pozole
Pozole is a traditional soup or stew from Mexican cuisine. It is made from hominy with meat (typically chicken or pork), and can be seasoned and garnished with shredded lettuce or cabbage, chili peppers, onion, garlic, radishes, avocado, salsa or limes. A favorite every Thursday in the state of Guerrero.
Tinga de Pollo
Tinga is a Mexican dish made with shredded chicken in a sauce made from tomatoes, chipotle chilis in adobo, and sliced onions. It is often served on a tostada. It's roots are from Puebla but we have modified the recipe in our own style. The flavors will amaze you!
Fajitas de Pollo
Believe it or not....Fajitas were born in Texas, not in Mexico, but we love them just the same! In this class, you will learn to make them with chicken...and you will learn to make tortillas! Fajitas can me made with skirt steak or shrimp. We are happy to modify the protein for a custom class!
